Raisin & cinnamon bread

This week’s Inspiration is a light and fluffy wheat bread with raisins and a pinch of cinnamon. It is coated with oat flakes and has a thin crust.
For this recipe I was inspired by a soft bun I used to eat in The Netherlands as a teenager. I don’t remember how they called it but I do remember its slightly dark color and its taste of raisins and cinnamon…

Wheat flour - water - sourdough - raisins - milk - butter - malt syrup - oat flakes - sel de Guérande - yeast - cinnamon
